I have discovered a no knead, super easy, delicious bread recipe that is freezer friendly. My family has enjoyed this quick recipe many times with several different dinner meals. I thought it was about time I share it. I modified the Frugal girl’s recipe slightly by giving it my white whole wheat twist that we always make at my house. If you’ve made my no knead shoe box sandwich bread recipe, this one is just as easy, yields two loaves and completely meets all of your comfort needs.
Ingredients:
- 3 cups all-purpose flour
- 3 cups white whole wheat flour
- 1 tablespoon sugar
- 1 teaspoon salt
- 1/4 teaspoon baking soda
- 2 packages (4.5 teaspoons) active dry yeast
- 2 cups milk plus 1/2 cup water (heated for 2-1/2 minutes in microwave)
- cornmeal or white whole wheat flour for dusting loaf pan
Directions:
- Combine 3 cups of all-purpose flour with the yeast, sugar, baking soda, and salt in a mixer bowl.
- Heat liquids to 120-125 degrees in the microwave; add warm liquids to dry ingredients in mixer bowl, and mix for 2 minutes.
- It will be rather runny at this point. Add remaining flour and beat for two minutes (dough will be thick).
- Spray two 8.5 x 4.5 inch loaf pans with nonstick spray and then sprinkle with cornmeal.
- Divide the dough evenly between the two pans and smooth evenly.
- Cover with a wet tea towel and let rise in a warm place for an hour or until doubled.
- Bake in a preheated 350 degree F oven for 25-30 minutes. Turn the loaves out of the pans and cool on a wire rack.
- To serve, slice with a serrated bread knife and enjoy.
- Cool completely to freeze. Wrap tightly in plastic wrap and place in a gallon size freezer bag.
We enjoyed the first loaf on skillet lasagna night. I decided to sprinkle garlic salt and Parmesan cheese on top for an Italian flair.
Another night we had it with homemade potato soup with local Sour wood honey and it was devoured by my family. In fact, I looked over and there was one end piece left and I grabbed it. There are six of us and I might just double this recipe the next time I make since I have four loaf pans in my cabinet.
It’s comforting with this soup with or without honey, I promise.
I highly recommend keeping an eye out for extra loaf, muffin and cookie sheets while you shop at thrift stores, Goodwill or garage sales this year. They come in really handy for freezer cooking!
