Easy Irish Soda Bread

I went on a quest to look for an easy Irish soda bread for my foods class and I found it, along with thousand  others on allrecipes. I was pleased with how well it turned out and seriously easy it was. Since I’ve never made this type of quick bread before, I thought I’d better try it out first.  It looks like an over sized biscuit.

The dough mixed up easily and I placed in on a baking mat.

IMG_3497I slashed  an X and brushed it with the buttermilk/butter mixture. One thing I would do differently when I demonstrate in front of the class is to press it flatter before slashing it.

I like how the egg in the recipe gave the bread a rich colored crust.

I checked the temperature for 195 to 200 as suggested by another recipe.

I know my students are going to enjoy this Irish bread on Saint Patrick’s Day. I have my easy cheese sauce planned for Dairylicious cooking day and students will dip their bread sample in the hot cheese sauce. What better way to enjoy this bread?

How do you eat your Irish Soda Bread?

 

Ingredients:

 

Directions:

  1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease a large baking sheet.
  2. In a large bowl, mix together flour, sugar, baking soda, baking powder, salt and margarine. Stir in 1 cup of buttermilk and egg. Turn dough out onto a lightly floured surface and knead slightly. Form dough into a round and place on prepared baking sheet. In a small bowl, combine melted butter with 1/4 cup buttermilk; brush loaf with this mixture. Use a sharp knife to slash an ‘X’ into the top of the loaf.
  3. Bake in preheated oven until a toothpick inserted into the center of the loaf comes out clean, 45 to 50 minutes. Tent with foil if it’s getting too brown and still not done in the center.  Check for doneness after 30 minutes. I check my loaves with a thermometer to register between 195 and 200 degrees F. You may continue to brush the loaf with the butter mixture while it bakes.
