I am enjoying my CSA boxes brimming with fresh vegetables. This week I used my local cucumbers and Vidalia onion to make this fresh salad that will last for days in the refrigerator. You know me, I like to make ahead and eat for a while. My new kitchen sign expresses the way I love to cook, season with love. I love the extra virgin olive oil that was sent to me by Moms Meet.
My kit included this beautiful dipping dish which is perfect for breads. My family loves homemade bread and I make my own olive oil dipping sauce here.
I’ve got my eye on this zucchini rice cake recipe that was included in my card collection. The kit was brimming with gorgeous photos of colorful vegetables and meats. I can’t wait to try a few using my CSA box.
In the meantime, I’ve prepared a simple, super delicious salad with a few staple ingredients and the olive oil seals the deal.
Did you know that cold pressed olive oil is more flavorful and delicate in taste? Because it’s made without heat or chemicals you can imagine the pop of flavor you taste when you prepare salads like this one. I like to drizzle the deliciousness over all my summer food prior to making and also as a finisher. It’s fabulous brushed on the outside of homemade pizza crust or drizzled on pizza after grilling.
- 2 cucumbers, peeled and sliced
- half medium Vidalia onion
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly cracked ground black pepper
- Fresh dill sprigs, finely minced {optional, but tasty}
- extra virgin olive oil {I used European fresh pressed olive oil}
- Place cucumber slices into large bowl. Cut Vidalia onion into long thin strips and add to the bowl.
- . Mix well with a fork and pour over cucumber and onions. Cover tightly with plastic wrap and store in the refrigerator at least an hour before serving.
