I roasted vegetables from my CSA this weekend. I had several small sweet potatoes, a squash, 2 garlic bulbs, eggplant, red peppers and onions and apples, of course. I made apple crisp, roasted potatoes, eggplant with the peppers and onions. The squash will be used for muffins and the garlic will become garlic butter for bread. Yum, it’s making me hungry writing about it.
Our family is fostering our first dog. My thirteen-year-old wants a dog and this is a fantastic way to see if he’s responsible. My daughter loves it, too. So, he is cute and maybe I’ve taken up with him also. We’ll see in two weeks.
